It's Been a While

Just a little procrastination while I finish some homework!

While I've been absent from blogging, we didn't stop in our vegan adventures and finally, made it to Plum Bistro for the most amazing vegan brunch. If you ever do anything in Seattle, make sure you go to Plum Bistro for the most amazing vegan and organic food. I've been planning my next visit ever since my first!

Lazy Sunday 2

Sundays mean sleeping in and lately, playing Bananagrams while enjoying a leisurely brunch.


Decided to try something new with our organic black mission figs from Spud -- fig cream stuffed French toast. Do I need to tell you it was delicious?



I can't wait to try this fig cream in crepes, or even substituting different fruits (mango cream French toast, anyone?). 

The best part? This recipe is easy to put together, leaving lots of down time to do with as you please while it bakes in the oven....

...Like making hashbrowns...

...Or tofu frittata...


Doubled recipe follows. For the original: Better With Veggies

Ingredients
  • 1 cup cashews
  • 1/2 cups +1 tablespoon water
  • 1 tablespoon agave
  • 1/2 teaspoon almond extract
  • 12 medium black mission figs
  • 1 1/2 cup non-dairy milk
  • 4 Ener-G eggs (vegan egg replacers)
  • 1/2 teaspoon cinnamon
  • 2 tablespoons sugar
  • 8 slices whole wheat bread 
Instructions
Preheat oven to 400 degrees.
Crush cashews in the food processor until fine. Add water through almond extract and process until thoroughly combined. Add figs and combine.
Cut crusts off bread and lay in bottom of loaf pan. Combine non-dairy milk through sugar in small bowl. Pour half of mixture over bread. Top with 1/2 of cashew mixture, followed by remaining pieces of bread. Top with remaining milk mixture. I would dredge the toast in the milk mixture and pour any remainder on top instead. I almost ran out and I didn't double the amount of bread
Bake in oven for 55 minutes to 1 hour. Top with additional fig cream and fresh fig slices.

More Fall Fashion

It is my firm belief that we can all support cruelty free practices while still looking fabulous. Case in point? Vaute Couture. Not only are they animal friendly, they're people friendly too! Great quality, environmentally friendly and locally made in good ol' NYC, Vaute Couture is THE place for vegan friendly fashion.






And they have men's coats too!!!


They're taking preorders for their new fall season now, and believe me, they sell out FAST. Unfortunately, I dropped the ball and missed the 50% off during the first 24hours, but everything I have heard about these coats is that they are super warm, and great quality. Well worth the price (which is really on par with traditional winter coats). They have great accessories and tshirts too!

The center off the shoulder sweater has been on my wish list since last year, but they sell out of these sweatshirts all the time. Visit their website and support a great company that remains true to their ethical practices while making gorgeous clothing!!

Fall Essential: Faux Leather Biker Jacket

I have been looking for the perfect faux leather biker jacket for the last year but they're either real leather, or they just don't look quite right. So, it is with giddy delight that I show you my latest H&M purchase!






I love the combination of the edgy jacket with a feminine, flirty dress. Just a little bit rock and roll, and a little bit girly girl.

I'm A Winner!!

I've talked about the absolutely gorgeous blog: this is glamorous in the past, and it remains one of the few blogs I consistently and obsessively read. Imagine my surprise when I receive a message on Google+ from the author, Ms. Roseline herself!



And then, to learn I won $150 to spend at we dream in colour....I was literally jumping with joy!!!!




Isn't she just the sweetest and loveliest lady? I have a feeling one would not be disappointed when meeting her for the first time.

And now for the important part....what am I going to buy?!?!?!

Cafe Happy

Facing a Friday spent cooped up in a windowless classroom talking about learning styles and mentoring was made much easier with a little lunch date with my hubby.



So much good vegetarian food....what should I choose?!?

Lazy Sundays....



Sleeping in on Sundays means waking up at 8am now instead of 5am which, for a night-shifter is pretty early. But when waking up early means a leisurely morning with the hubby drinking tea, eating figs and fresh baked scones, it's worth it.
